The first Roy s Restaurant opened in Honolulu in 1988. At the time, chef Roy Yamaguchi was one of the first chefs to blend European cooking techniques with the fresh local ingredients found in Asia and the Pacific Rim. He calls this style of cooking the Hawaiian Fusion cuisine. Today, there are now nearly 35 Roy s Restaurants in chef Yamaguchi s Hawaiian Fusion Empire, including 25 in the continental United States, seven in Hawaii, one in Japan and one in Guam. Roy Yamaguchi s Hawaiian Fusion cuisine blends fresh local ingredients with European sauces and Asian spices, always with a focus on seafood. Guests find a range of appetizers, entr es, fresh fish dishes and desserts to choose from. Roy s Restaurant maintains a location in Newport Beach, Calif.
