History
In 2012, I learned that American breads are made with potassium bromate, both to promote oven spring and as a preservative. Usually just called bromate, it's been found to be carcinogenic in rats and nephrotoxic in both man and experimental animals when given orally. I couldn't believe I was giving that to my kids! Turns out, many flours used in the United States are treated with bromate to preserve it, not to mention more is added to commercial breads to aid baking. I started baking fresh bread with unbleached, unbromated flour and other quality ingredients for my kids every week instead of buying bread from the grocery store and they loved it. In January 2015, I opened Redshirt Bakery not only to provide quality baked goods, but also fandom-inspired cakes and desserts that make food more fun and social.
