History
Originally opened in 2004 by Kip and Sheri Waide, Southwark was known by many as being at the forefront of both the Slow Food as well as the Classic Cocktail movement in Philadelphia. After over a decade of serving some of the city's best cocktails and most memorable dining experiences, Kip and Sheri Waide have sold their beloved restaurant to Chef Christopher D'Ambro and Marina de Oliveira. After a brief closure due to minor renovations, Southwark is reopening with the same dedication to the local food movement and spirit driven cocktails. Chris and Marina are thrilled to be carrying on such a wonderful tradition in this reimagined neighborhood favorite!
Specialties
At Southwark we source our ingredients from local farmers and co-ops in order to sustain and support local farms and economies. We have cultivated relationships with over 12 family farms to ensure that our produce, dairy and meats are at their peak of freshness and flavor when harvested. This results in a truly unique menu that is one of the freshest and most dynamic in the Philadelphia region. We strive to set the standard in the farm to plate slow food movement. The bar is equally dedicated to featuring local and hand crafted products. We pride ourselves in preparing classic and inspired spirit driven cocktails.
