Starting in his garage, founder Matthew Burch has dealt with local producers since moving back to Oklahoma in 2007. Initial offerings were based in farmers' markets and included wholesale deliveries to restaurants. In 2011, UA moved into a 5000 square foot facility in Oklahoma City's Farmers' Market District.
