From Ginza To The World. At Sushi Ginza Onodera NYC, we offer Edomae style traditional sushi in an Omakase setting. The Edomae sushi style involves using the aging process to preserve the fish, develop umami flavors, and create a more tender texture. A variety of methods are employed including marinating in soy sauce, simmering in broth, and curing in salt or kombu (Japanese sea kelp) from a few hours to several days. Our fish is flown directly from the Toyosu Fish Market in Tokyo and local fish markets in Japan multiple times a week. Our rice is from Niigata prefecture and seasoned with aged red vinegar. We provide the best quality Japanese cuisine and culture at our premises on the 5th Avenue in front of New York Public Library. We are a non-tipping establishment.
