We started the process of owning and operating Ellicottville Distillery LLC in 2015. Our line of spirits The Agronomist, represents our role in the connection between the land and the finished spirit, and our unique position to offer a product entirely made by us. The two folks that make this happen our Charlie Bares, our resident agronomist, and Bryan Scharf, our distiller. Charlie has been farming for 30 years, can grow just about any crop suitable to making spirits: wheat, barley, corn, rye, to name a few. Using local parcels in the surrounding area, Charlie manages the production of crops used in our whisky and vodka - and soon-to-be gin, bourbon and others. Bryan then takes the freshly grown grains and ferments them into an alcoholic mash, and distilled them using our custom-made, German copper pit still.
