Lakin's Gorges Cheese makes fresh and aged cow's milk cheeses using organic cow's milk. Based in Rockport, Maine, each cheese is individually handcrafted in small batches. The cheeses available are: Basket molded ricotta - each cheese is made in a basket to produce a firmer cheese. Unsalted, this cheese reflects the seasonality of the flavors of the milk. Blends well in cooking, or serve on its own. Medallion - a 2 ounce, soft ripened cheese aged for 2 weeks. Notes of citrus and fresh mushroom. Prix de Diane - an 8 ounce, soft ripened cheese aged 4 weeks. The curd is hand ladled into molds to produce a high moisture cheese that is creamy and buttery. Opus 42 - this semi-firm cheese is aged for 3 months and mold ripened. It is sharp and nutty. Morgan - a firm cheese, made in an 8 ounce wheel, that is aged for 3 months. It is very complex, slaty and grassy with a long finish.
