History
In 2013, after spending what seemed like a 'lifetime' in Chicago's restaurant industry, Papa George decided to retire early and move to Kentucky. He also decided to pursue a lifelong dream of owning his own hot dog business. Fall of 2013 saw the debut of authentic Chicago Style street cuisine on Radcliff, Kentucky's main thoroughfare, Dixie Highway (31W). Almost immediately, word spread about the mouthwatering Italian beef sandwiches, juicy hot dogs, savory Maxwell Street polish sausages and flavorful beer brats. Folks couldn't stop talking about the vast array of condiments, including awesome grilled onions, spicy giardineira and an interesting collection of mustards. And even though frowned upon in Chicago, Papa George even offered over eight different ketchup varieties.
