My papa Dave and his four brothers were cooks in the Army during WWII ETO. They learned how to smoke meats in Germany and how to marinate and cure meats in France. In 1950 they hired southerners from the freedom railway and they taught my grandpa how to make rubs and BBQ sauce. In the 60s My dad took over when they moved to 63rd & Dorchester on Chicago's south side. I still see my grandfather cutting live birds heads off in the alley behind the shop. Nothing like fresh poultry and game birds! I incorporated in 97' when I began running the family biz. Fixing great authentic BBQ ever since! Not many barbecue caterers can boast that they finished in the top 40 out of 500 entries at the American Royal BBQ Open. Book us now for your tailgates etc! Small private parties is what we do now! We are shifting our focus to new media! Cookbook writing, video, etc. For gigs of 30 or more, you can hire BBQ Experts Beckie C. And David W. and their team of sycophants but we don't do that anymore.
Specialties
After over 20 years of catering we are heading in a different direction. We wrote a BBQ cookbook recently and our concentration will be focused on New Media. In over 20 years we have only one negative posting here from an actual customer and that customer was from 2005!
