In 1984 Fred D. the owner while operating Simons Seafood Bar & Grill met Chef Paul Prudhomme at his first book signing in Atlanta. One thing led to the other, Chef Paul Invited Fred down to Louisiana where he spent time learning Cajun Cuisine from the Master. Louisiana Bistreaux is the culmination of years of testing and fine tuning Cajun recipes.
