I decided to open La Panza in 2015 since i noticed that there were not places around that showed the true representation of Peruvian Coastal cuisine. During my lifetime, i have traveled to many coastal places in search of waves. I always tried to find the best restaurants that offered the true authentic cuisine of the area, where sometimes i exchanged ideas with the chefs or fishermen from the area. I tried to gather a little bit of that, and i wanted to share that with our guests.
