When one enters the Wahoo's taco shop, it seems as though its a small, local favorite, but actually the franchise began in 1988 and now has over 50 locations in California, Colorado and Texas. The walls are lined with stickers, and locals can been seen here enjoying seafood dishes and the special beer of the month, but it is not just a mexican food shop. Three brothers, Wing, Ed, and Mingo came from Brazil and, under the tutelage of their famous chef father, incorporates Mexican, Brazilian and Hawaiian into their menus. The seafood served in the taco, burritos, platters and other dishes are eith Wahoo or Mahi-Mahi, depending on season and location. The famous Wahoo salasa is unique to the franchise, and is made with fresh tomatoes, onions, cilantro, and peppers. Wahoo's also provides catering services and any Mexican dish Encinitans love.
