I turned my love of BBQ into a new career. I flew down to Georgia to learn the fine art of smoking meat. I realized that most BBQ produced out West, was not true BBQ, but an imitation. I purchased a mobile, pit/smoker, to bring that same great tasting BBQ to you. Down South, they simply add a rub to the meat, and skip the BBQ sauce. A mop sauce is served on the side, so you taste the flavor of the smoked meat. I've adopted this method, but I still add a little of my homemade BBQ sauce to the meat. I think you'll love the result. Every Monday, we serve up our smoked meats at the Lawrence Welk's Farmer's Market from 12pm - Sunset. We serve smoke beef brisket, pork shoulder, Italian sausage, all beef hotdogs, pork spare ribs, smoked baked beans and a Southern coleslaw. All our meat is slow smoked over seasoned oak then I add a little of my home made BBQ sauces. Our Ribs cook for 4 hours, pulled pork 7 hour, smoked Italian sausage 2 hours. We also do special orders for Beef Brisket, Hams and 12 lb Turkeys Brunswick Stew and pastrami. If you haven't been to the old south you probably have never tasted real Smoked BBQ. We don't use bottle smoke flavor or boil our meat to get it tender then smoother it in bottled sauce. All our sides and sauces our made from scratch and served fresh for you.
