When Butch Francis moved to the Monterey Peninsula from New York, he brought out an old family sausage recipe and replaced the venison with his homemade Italian sausage, a product he'd honed over eight years. He also added 18-year-old balsamic vinegar, pinot noir and Heineken beer. He refuses to reveal his secret ingredient, though -- something that adds a hint of sweetness.

Cowboy Sausage products are handmade under the supervision of master artisan, Butch Francis. Butch insists on using choice cuts of meat and fresh ingredients. Spices are added to complement and not overwhelm the flavorful, well-marbled natural pork.
