History
Our beginnings were humble. After working as a pastry chef + bread baker in Los Angeles and San Francisco, owner + chef Kristin Colazas Rodriguez moved back home to Long Beach to start Colossus out of a shared commercial commissary kitchen. For our first year we made croissants the old fashioned way-- entirely by hand with a rolling pin. Our bread was made by hand in small batches, and then baked in cast iron skillets, 8 loaves at a time. Just one year after launching out of our shared space, we found a space in San Pedro for our own kitchen, and opened our first cafe: Colossus in august of 2019. Our small bakery + cafe in San Pedro is a small grab and go neighborhood cafe offering handcrafted seasonal morning pastries, carefully brewed coffee from Penny Coffee Roasters (roasted by Kristin's husband Nick Rodriguez), and hot loaves of bread.
Specialties
Colossus is a neighborhood hospitality-driven bakery and cafe. Hand made naturally leavened (sourdough) breads and croissants made with organic flour and high quality ingredients. Serves food highlighting breads and local high quality produce. Exceptionally executed coffee service making cappuccinos and lattes featuring local fresh roasted beans. Also serving loose leaf tea from some of the world's finest tea purveyors.
